The 1/2 Beef is the perfect package if you know you love our beef and are ready to stock up your freezer for your family.

The 1/2 Beef package is 200 lbs of Cut and Packaged Beef and needs 10 cubic feet freezer space.  Which is equivalent to 4 shelves in an upright freezer.

What You Get in a 1/2 Beef:

Savory Steak: 32-40 lbs may include NY Steak, Tenderloin, Rib Steak, 4 Minute Steaks, Sirloins, Round, T-Bone or Chuck Steak.

Slow Cook Options: 60-76 pounds may include Roast, Brisket, Stew Meat, Ribs, Osso Bucco.

Have you ever wondered how many drugs and vaccines a cow or pig are exposed to in their lifetime? Well, that is where our story begins. 

Just like many of our best customers, we understand what it is like to not be able to trust what’s available to purchase. That is why in 2016 we launched J & K Oliver Farms LLC. 

With a few acres, just as many animals and a lot of hard work we were committed to doing things the right way. Today, we are recognized as a trusted farm-to-table meat producer our customers have grown to know and love. 

At J & K Oliver Farms LLC, we are committed to working with nature instead of against it, raising our animals humanely without harmful medications, GMOs or insecticides that you will find in most available sources. We believe this is essential for providing a quality product that is healthy for families and healing for the environment.

What kind of beef cattle do you raise?

We raise Angus Cross cattle, which are born and raised on our farm.

What do your cattle eat?

Our cattle are 100% grazed, grass-fed, grass-finished, and pasture-raised on our land. Our pastures are diverse with grasses, flowers, timothy, red clover, white clover, alfalfa, and more, resulting in nutrient-rich beef.

Do you use antibiotics or hormones on your cattle?

No, we do not use any hormones or sub-therapeutic antibiotics on our cattle. In rare and necessary cases, we may use antibiotics to treat a sick calf, but those animals are removed from the meat program and will never end up on your plate.

How are your animals treated?

Our animals are treated humanely and are raised in a low-stress, natural environment. They have access to spacious, clean, fresh pastures, and we prioritize low-stress livestock handling. We believe in working with nature instead of against it.

Is your beef certified organic?

We are not currently certified organic. We manage the factors in our control to be as close to organic as possible.

Do you practice Holistic Management and Holistic Planned Grazing?

Yes, we have been practicing Holistic Management for 5 years, and we regularly attend conferences, workshops, and study Holistic Management, organic ranching, holistic livestock health, soil health, etc. to keep up to date on the latest practices in our field.

Where is your farm located?

We are located in Eastern Washington State.

How many cattle do you harvest each year and when?

We plan to harvest between 20 and 30 a year. We harvest ground beef and specialty items year round. Bulk beef is harvested between November and February.

Where do you get your cattle processed?

We take our beef to Limit Bid Processing, a small, super clean, family-owned USDA processor that we’ve worked with for years. Your beef will dry age for 14 days before our butchers cut, vacuum seal, and flash freeze your beef.

We also use Honest Cut Meats, which is even a smaller USDA facility, and this is where we get our specialty meats processed. Such as jerky, pepperoni sticks, hot dogs, brats, summer sausage, deli cuts etc.

How long is the frozen beef good for?

With the heavy-duty packaging and vacuum seal our butcher uses, our beef will last indefinitely, although USDA recommendations are to use it within 1 year.

Is your beef dry-aged?

Yes, our beef hangs in the carcass for two weeks before being made into cuts. This intensifies the flavor and increases tenderness.

Can I choose my cuts?

Yes, for preorders and for an additional fee, you can choose your cuts when you order or a Whole or Half CowShare. If you order a Quarter CowShare, it will be cut with a Butcher's Standard Cut.

Why is your grass-fed beef higher priced than generic beef?

The cost of processing is one of the two major reasons. We choose to have our Cow Shares butchered under small, artisan butcher plants like Limit Bid Processing, which is more expensive than the giant multi-national packers that have an economy of scale. Our beef is also raised in a way that is best for the earth and for the health of our customers, and we prioritize regenerative practices, which require more attention and care. We believe that the quality and health benefits of our grass-fed beef are worth the investment.

We raise our cattle to 30 months of age whereas grain finished cattle can be processed in as little as 18 months. This is how we optimize our marbling and flavor.

What are the health benefits of Grass fed and grass-finished beef?

1. Lowers Inflammation

Grass-fed beef contains 2-5 times the amount of omega-3 fatty acids. This is important because the Western diet is typically low in omega-3 fatty acids and high in omega-6 fatty acids. When the ratio of omega-6 to omega-3 gets too high, it creates inflammation and increases the risk of cardiovascular disease, cancer and autoimmune disease.

The omega-6 to omega-3 ratio of grass-fed beef is 6 times lower than grain-fed beef, which means it will help restore a more optimal ratio and prevent runaway inflammation.

2. Higher in CLA

Conjugated Linoleic Acid (CLA) is a polyunsaturated fat that helps prevent diseases like cancer, diabetes and heart disease. One study in women found that high levels of CLA decreased the risk of breast cancer by 60%! Grassfed beef contains 2-3 times the amount of CLA compared to grain-fed beef.

3. Higher in Trace Minerals

Grassfed beef has more calcium, magnesium, potassium, zinc, phosphorous, sodium, and iron compared to grain-fed beef. These trace minerals are essential for facilitating important biochemical reactions in the body.

4. Higher in B Vitamins

Grass-fed beef has higher levels of thiamin and riboflavin compared to grain-fed beef. These B-vitamins are essential for energy and red blood cell production, as well as immune function.

5. Higher in Beta Carotene

Grass-fed beef contains 7 times the amount of beta-carotene compared to grain-fed beef. Beta carotene is needed to produce vitamin A, which benefits skin health, immunity and vision.

6. Higher in Vitamin E

Grass-fed beef contains four times the amount of vitamin E compared to grain-fed beef. Vitamin E helps protect against cardiovascular disease, cancer, and aging-related diseases.

7. Higher in Glutathione

In addition to the superior taste and environmental benefits of pastured beef, there are also a ton of health benefits to be reaped once you make the switch.

8. Improved Mental Health

Grass-fed beef is higher in levels of tryptophan than grain-fed beef. Tryptophan is a precursor to serotonin, which is a neurotransmitter that promotes feelings of well-being and connection to others. Serotonin is a powerful guard against depression.

9. Higher Levels of Fat Soluble Vitamins

Grain-fed cows are unable to absorb high levels of fat soluble vitamins (vitamins A,D, E, and K). Thus, grass-fed beef contains higher levels of these essential vitamins.
